The weather has been so hot lately. Funny I said this because it was SO foggy on July 4th that I couldn’t see a single firework without being very close to them. Ahhhh 4th of July in the Bay Area. The joke’s on us. And a few days later, we had another heatwave. Where I live, it often hits triple-digit temperatures and gets super hot in the summer.
But that did not stop me from doing my weekend activities – grilling and gardening. After all, summer is here and one of the things I love most about this season is grilling out! Speaking of grilling, you guys HAVE TO TRY these Grilled Chicken Skewers! This is one of the easiest and tastiest grilling recipes I’ve ever made. Lucky me, because there’s Safeway nearby. They make healthy eating easier since they carry a wide variety of high-quality, affordable products, including organic meat.
For this recipe, I’m using O Organics® chicken cutlets because I’ve been enjoying clean and healthy eating lately, and I’m so loving this healthy lifestyle. And that’s why I trust O Organics products. One thing you should know about O Organics meat – it is USDA-certified which means it is produced and handled in accordance with USDA organic standards without the use of growth hormones or antibiotics. If you’re not a fan of chicken breast, feel free to replace them with O Organics chicken thighs.
While these skewers are being grilled, pour some chilled wine or grab a cold beer. Then, make your salsa. For these skewers, I made an easy green salsa recipe with a combination of green tomatoes, jalapenos, cilantro, and garlic. Easy peasy.
Since it’s summer, we’ve been talking about having friends over to our place for impromptu barbecues and I can’t wait to serve them these skewers. Lucky me, this is an easy recipe to make and I have Safeway nearby so this can be done in no time. Ingredients
- 1 ½-2 lbs O Organics chicken breast tenders
- 1 tsp kosher salt + more for salsa
- 1/4 tsp black pepper freshly ground
- 3 TBS O Organics olive oil and more
- 1/4 tsp black pepper freshly ground
- 1/2 tbs ground onion powder
- 1/2 tbs ground garlic powder
- 3 cloves O Organics garlic
- 2 medium-size green tomatoes
- 3-5 jalapenos remove seeds
- 1 bunch fresh cilantro
- 1/2 brunch french parsley
- Juice from ½ fresh lime
- 1 tbs fish sauce optional
- 1 cup O Organics diced tomato no salt added, discard liquid
- 1 cup roasted corn kernels
Instructions
- If using wooden skewers, soak in water for at least 15 minutes before cooking.
- Coat the chicken with 2 TBS of olive oil and season with 1 tsp. of salt, pepper, onion powder, garlic powder.
- Preheat a char-grill pan over medium heat. Thread the chicken onto skewers. Cook the skewers, in batches, for 4-5 minutes each side or until cooked through.
- Using a food processor, combine 1 TBS of olive oil, garlic, green tomatoes, jalapenos, cilantro, parsley, lime, and fish sauce, and process until finely chopped. Adjust seasoning with olive oil, salt and peppers.
- Serve the chicken with green salsa, corn, and diced tomatoes.
