I’m in love with pistachios! Not sure how it started, but my passion for pistachios has grown even more after I had this pistachio pesto. Remember this one?

I made a jar of pistachio pesto and had it over pasta, fried eggs, and grilled sandwiches. I want to put pistachios on everything. It was so good, and I am craving another serving now, and I thought it’s a good idea to raise my game. So here I am, first time cooking lamb. Some people, including myself, have a love-hate relationship with lamb. It’s okay, but it requires some love and attention to cook lamb…or you will end up disappointed with the result.

Another issue with this recipe is grilling. It’s Spring, but the weather has been windy and a bit cold lately, which merely translates to … let me stay comfy inside. And I am glad I found this Hamilton Beach Indoor Searing Grill (pstt…it’s on sale now). It’s a lifesaver, yo! And I love everything about this. It’s easy to use, to clean, and doesn’t take too much space on the countertop.

So this recipe has both – love and pistachios. It has all the flavors you want in one bite, and the fun part is using a rosemary sprig as your stick. How fun is that? Have you ever cooked lamb before?

Description

Fancy something different tonight? Try these budget-friendly, Middle Eastern-inspired lamb skewers that are easy to make and tasty. One grill, super fast to make, and full of smoky flavors.

Ingredients

  • 1/2 lb ground lamb
  • 1/2 lb ground beef
  • 1 tsp salt
  • 5 cloves garlic, minced
  • 1 medium onion, grated
  • 3/4 cupgood handful shelled pistachio nuts, crushed
  • 1 cup chopped fresh parsley
  • 1 tsp gr. cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • Rosemary sprigs

Instructions

  1. Place all ingredients, except rosemary sprigs, in a bowl and combine until the mixture blends.
  2. Get a rosemary sprigs and shape the meat around and along the sprig.
  3. Grill the skewers on to its highest setting until nicely golden on all sides.
  4. For garnish: warm your flatbreads for 30 seconds on your griddle pan. And add your favorite salad to a plate.

    What a fun recipe! I’ve totally been meaning to use rosemary as a skewer sometime. I love the flavors you’ve got going on here, too, Linda! Pass me a skewer, please! (Also, that grill looks mighty cool…especially for rainy nights. Or even for snowy nights in the winter!) Thanks for sharing this one! Oh, and my favorite slow cooker recipe?     That looks delicious! I don’t use a slow cooker very often and mostly for desserts and stews. One of my favorite slow cooker dishes is Indian pudding — slow cooker makes it so much easier!
