Salmon Tikka Masala

  • 1 tablespoon natural yogurt
  • a few sprigs fresh cilantro
  • 1 pound salmon fillets, from sustainable sources, skin & bones removed
  • 4 tablespoons tikka masala paste
  • 2 tablespoons olive oil

Garlic Fried Rice

  • 2 cups day-old rice
  • 3 cloves garlic, minced
  • 1 tablespoon fish sauce, or salt and pepper
  • 2 tablespoons olive oil

Instructions

  1. Salmon tikka masala: slice each salmon fillet across lengthways into three 1.5cm wide slices.
  2. Heat a large frying pan over high heat. Once hot, add the olive oil, put the salmon into the pan and cook for about 1½ minutes on each side until cooked through. Add the paste and yogurt, and let it simmer for 5-7 minutes. Top it off with a handful of cilantro.
  3. Garlic Fried Rice: use your hands to break up any clumps of rice.
  4. In a large frying pan, add the olive oil and garlic over medium heat, stirring regularly for 1-2 minutes. Add the rice and stir to coat evenly with the oil and garlic. Turn up the heat and stir-fry the rice until it’s heated through. Season with fish sauce or salt to taste
