Strawberry French Toast Cupcakes #BrunchWeek

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 11/2 cup a.p. flour
  • 1/2 tsp bk. powder
  • 1/2 tsp bk. soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup buttermilk
  • 1 cup chopped strawberry
  • Confectioners sugar, optional

Instructions

  1. Preheat the oven to 350F.
  2. In a bowl, sift the flour, bk. powder, bk. soda, salt, and cinnamon. Set aside.
  3. Cream the butter and sugar until light.
  4. Add the eggs and whisk together. Add vanilla extract and mix well.
  5. Add the flour mixture and beat on medium speed until just combined.
  6. Slowly add buttermilk and mix slowly until combined. Using a spatula, add the strawberry.
  7. Fill cupcake liners just over 2/3 full.
  8. Bake for 17-22 minutes or until a toothpick comes out dry.
  9. Let it cool for 5-10 minutes and dust with confectioners sugar.
