Summer weather is finally here, and like always, I only crave something cool and refreshing and can be ready in no time. And that’s how I came up with these watermelon cheese skewers. If you’re a fan of halloumi cheese, you’ll love these easy and delicious skewers. It’s delicious, just like this halloumi peach salad, and refreshing, like watermelon Caprese salad. And yes, I could totally eat this as a meal.
Ingredients for watermelon and cheese skewers
The halloumi is so rich that you don’t need much and can find the rest easily.
- Cheese. Halloumi cheese is one of my favorites and makes a perfect duet with watermelon. Or any baked cheese will do. My favorite brand is The Big Moo Cheese
- Watermelon. Find a good and sweet, if possible, watermelon
- Basil, mint. They both make a good combo for this appetizer
- Hot honey. A little heat won’t hurt, and it will make these grilled watermelon taste even better
- Apple cider vinegar adds more depth of flavors
- Mint leaves for garnish
- Skewers…because we’re turning them into kabobs

- First, you must gather all the ingredients because making watermelon kabobs takes no time.
- Preheat the grill to medium-high. You can also use a grill pan, and it creates a similar grill mark.
- Skewer the watermelon and halloumi or baked cheese. I try to cut both evenly so they make a better presentation. Brush the watermelon with olive oil, then season with salt.
