Wheat germ, you sneaky thing you.
In truth, you will thank yourself for baking these unbelievably decadent cookies. Picture this… Freshly-baked chocolatey melted goodness. They are SO GOOD… for breakfast with coffee, after lunch as dessert, before dinner as a snack, and another bite after dinner with a tall glass of milk. You may be tempted to judge, but we all need something sweet in life, right? And after you have tried these wheat germ chocolate chip cookies, there is no going back.
But first, let’s talk about Levain Bakery. By now, everyone should know them by their famous cookies. In case you don’t know them yet, check out their spy camera. Sorry, I mean website. In fact, in my attempt not to miss the hype, I went through a lot of effort to place an online order so I could taste the ‘original’ Levain Chocolate Chip Cookies.
But, let’s get back to these amazing wheat germ cookies.
So, what is wheat germ?
Wheat germ is the central piece found in the wheat kernel and is the part that is responsible for the plant’s production. This means that it is filled with minerals and vitamins. Some of the benefits of this tasteless power food include being rich in antioxidants and fatty acids, it improves your immune system and stamina, it treats skins problems, and it is great for your digestive system.
With so many benefits, who wouldn’t want to eat wheat germ?
The first time I had wheat germ was in the form of cookies by Specialty’s when they had just started. Their cookies are so good, especially when they’re freshly baked. So, to recreate those tasty memories and delicious flavors, I created my own version to my liking… which is with lots of melty chocolate chips, of course! Description
These wheat germ chocolate chip cookies are filled with oats, wheat germ, and chocolate. Perfect for an easy breakfast on the go or as an afternoon energy-boosting snack. And they taste fantastic!
Ingredients
- 1 cup old fashioned whole rolled oats
- 1 cup wheat flour
- 1 cup wheat germ
- 1/2 teaspoon baking soda
- 1/2 cup coconut flakes
- Pinch of salt
- 1/2 cup (8 tablespoons) unsalted butter at room temperature
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 1/4 cup date syrup
- 1 large egg
- 1 teaspoon vanilla
- 1 cup bittersweet dark chocolate chips
- 1/2 cup pecans
Instructions
- Mix the oats, flour, wheat germ, baking soda, salt, and coconut flakes in a medium bowl. Whisk until mixed in.
- In a separate bowl, beat the butter with an electric mixer until fluffy. Add the granulated sugar, brown sugar, date syrup, egg, and vanilla, and continue whisking until smooth and creamy.
- Add in the dry ingredients and continue whisking on low speed until just combined.
- Stir in the chocolate chips and pecans. Mix well. Chill the dough in the refrigerator for at least 30 minutes.
- Preheat oven to 400°. Line a cookie sheet with baking paper or a Silpat. Use a cookie scoop to scoop the dough on the baking sheet. Bake for 9-12 minutes or until the edges and top are barely golden.
Notes
The dough can be prepared in advance and kept in the refrigerator for up to a week in a tight container. To enjoy this cookie the next day, microwave it for 30 seconds or until the chocolate melts.
