Watermelon Cheese Skewers

These watermelon cheese skewers are a fun, light, healthy summer appetizer. The flavor combinations make a salty, sweet flavor and are great for BBQs, picnics, or a quick snack.

Ingredients

  • 2 cups 1-inch cubed watermelon
  • 1 (8-ounce) block halloumi or baked cheese cut into 1-inch cubes
  • Salt
  • Olive oil for drizzling
  • 1/2 cup hot honey sauce
  • 1 teaspoon apple cider vinegar
  • Mint leaves for garnish

Instructions

Watermelon Cheese Skewers

  • Preheat the grill to medium-high. You can also use a grill pan, and it creates a similar grill mark.
  • Skewer the watermelon and halloumi or baked cheese. I try to cut both evenly so they make a better presentation. Brush the watermelon with olive oil, then season with salt.
  • Place the skewers on the grill, about 1-2 minutes per side. Don't forget to rotate the skewers!
  • Remove and drizzle with spicy hot honey sauce. Garnish with chopped mint leaves.

Spicy Hot Honey Sauce

  • Mix hot honey with apple cider vinegar in a small bowl. Drizzle over watermelon skewers.
