Preheat the grill to medium-high. You can also use a grill pan, and it creates a similar grill mark.
Skewer the watermelon and halloumi or baked cheese. I try to cut both evenly so they make a better presentation. Brush the watermelon with olive oil, then season with salt.
Place the skewers on the grill, about 1-2 minutes per side. Don't forget to rotate the skewers!
Remove and drizzle with spicy hot honey sauce. Garnish with chopped mint leaves.
