Rujak Cireng or Fried Tapioca Flour

This crispy and delicious rujak cireng or fried tapioca flour is a popular Indonesian street food snack made with tapioca flour and served with rujak sauce. They freeze well and you can fry them in an air fryer. Moreover, they're a crowd pleaser!

Ingredients

Cireng

  • cups tapioca flour
  • 3 garlic microplaned
  • 2 green onions thinly sliced
  • 1 teaspoon chicken seasoning powder
  • Salt to taste
  • ¾ cups water

Rujak

  • 300 grams palm sugar
  • 3-5 Thai chilies
  • 1 tablespoon tamarind paste
  • 2 tablespoons water add more if needed
  • Salt to taste

Instructions

Cireng

  • Mix garlic, green onion, tapioca flour, salt, chicken seasoning, and water. Cook over medium heat and keeps stirring until it gets thickened
  • Make cireng in a round shape using your hands
  • Heat the oil over medium heat, then fry cireng until they turn nice and golden

Rujak

  • To make the sauce: grind all the ingredients with pestle and mortar. Add water if necessary to thin the sauce
