Bourbon Bacon Skillet S'mores

There’s never really a bad time for a big scoop of s’mores. This version is amped up with everyone’s favorite: BACON! And there’s an adult version with bourbon in it.

Equipment

  • 10-inch cast iron skillet

Ingredients

  • 3 cups chocolate chips semi-sweet, milk chocolate, or a combo
  • jumbo marshmallows halved, or mini marshmallows
  • 1 cup bourbon
  • 6-8 slices of good bacon
  • Graham crackers broken into squares, for dipping

Instructions

  • Preheat the oven to 425 degrees F.
  • Stack the bacon strips directly on top of one another in piles. Slice the strips in half lengthwise and cut horizontally into chunks.
  • Add the bacon into a cast skillet. Cook for 2-3 minutes over medium high heat; then transfer to the oven for 20 minutes. Drain on paper towels and set aside.
  • Preheat the broiler on high.
  • Discard extra liquid of bacon fat, but let the cast skillet is lightly coated in bacon fat.
  • Pour chocolate chips in an even layer into the bottom of the skillet.
  • Pour bourbon over chocolate; then sprinkle with crumbly bacon bits.
  • Spread the marshmallows over the chocolate chips, covering the chocolate on a single layer completely.
  • Bake for 5-7 minutes or until marshmallows are toasted to your preference.
  • Serve in the skillet and use graham cracker squares for dipping.
