Ingredients

  • 1/2 cup unsalted butter room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 11/2 cup a.p. flour
  • 1/2 tsp bk. powder
  • 1/2 tsp bk. soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup buttermilk
  • 1 cup chopped strawberry
  • Confectioners sugar optional

Instructions

  • Preheat the oven to 350F.
  • In a bowl, sift the flour, bk. powder, bk. soda, salt, and cinnamon. Set aside.
  • Cream the butter and sugar until light.
  • Add the eggs and whisk together. Add vanilla extract and mix well.
  • Add the flour mixture and beat on medium speed until just combined.
  • Slowly add buttermilk and mix slowly until combined. Using a spatula, add the strawberry.
  • Fill cupcake liners just over 2/3 full.
  • Bake for 17-22 minutes or until a toothpick comes out dry.
  • Let it cool for 5-10 minutes and dust with confectioners sugar.
