Grilled Mushroom Toast

  • 2 tablespoons unsalted butter more as needed
  • 1/2 small white onion thinly sliced
  • 1 pound thinly sliced white or cremini mushrooms
  • 1 teaspoon chopped thyme
  • 2 small garlic cloves minced
  • Salt and pepper
  • 2 slices provolone
  • 4 slices bread for toasting


  • Heat butter in a pan. Sautéed the garlic and onion for 3-5 minutes. Add the mushrooms and thyme for another 3-5 minutes or until golden. Then adjust with salt and pepper.
  • Lay a slice of cheese on 2 slices of bread and 1/4 of mushrooms mixture. Cover with the remaining slices of bread.
  • Heat a little bit of butter in a pan. Then grill sandwiches on each side until they are well golden and the cheese has melted.
