Sauteed Garlic-Butter Mushrooms

In addition to their wonderful complex taste, mushrooms are packed with good-for-you nutrients. They are the perfect addition to soups, stews, and even cooked rice, but they stand alone very well, too. In this easy recipe, mushrooms are sautéed in garlic butter with a hint of herbs and make an easy, healthy side dish that you’ll want to make with every single meal.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1/2 pound fresh mushrooms halved (cremini, oyster, shiitake, white button, or a mix)
  • 2 whole sprigs fresh thyme or rosemary
  • Salt
  • Freshly ground black pepper
  • 1 tablespoon freshly chopped parsley for garnish

Instructions

  • In a skillet over medium heat, melt the butter. Add the garlic and cook for 2 minutes.
  • Stir in the mushrooms and thyme, and cook for 5 to 7 minutes, until mushrooms are browned and tender. Season with salt and pepper, and sprinkle with parsley to garnish. Discard herb sprigs. Serve immediately.
