Thai-style Duck Fried Rice

This Thai-style duck fried rice is a quick, 15 minute fried rice recipe that’s highly versatile. It works as a starter or main course and is easily adaptable to add what you want, including leftover duck meat.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 small yellow onion sliced or diced
  • 3 cloves garlic finely chopped
  • 1 small/medium-size red tomato quarter, remove seeds
  • 3 cups cooked Jasmice rice cold
  • 2 large eggs lightly beatenn
  • ½ pound leftover shredded duck meat
  • 2 tablespoons fish sauce
  • tablespoons oyster sauce
  • 1 cup fresh Thai basil

Instructions

  • Heat oil in a large wok or a large skillet over medium high heat
  • Add garlic and onion, then stir fry for 30 seconds
  • Add the duck meat, rice, and tomato, and stir fry 2 minutes
  • Pour the sauce and toss until all the rice is coated with the sauce
  • Push everything to one side of the wok and pour in the egg and scramble it quickly
  • Add basil and mix well
  • Turn off the heat, garnish with sliced cucumbers, and drizzle with sesame oil over it
