In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together milk, egg, butter, and vanilla.
Add the wet ingredients to the dry ingredients, then add the dried figs. Stir until just combined and do not overmix.
Heat a pan over low-medium heat and brush with oil.
Spoon a 1/4 cup batter into the pan and allow to cook for about 2 minutes, or until golden brown, on each side.
Repeat the process with the remaining batter.
Serve pancakes with fresh figs and drizzle with honey, maple syrup, or date syrup.
