Easy Fluffy Fig Pancakes

Ingredients

  • 1.5 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1.25 cups milk warm slightly
  • 1 large egg
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon chopped dried figs
  • 5-10 fresh figs for serving
  • Vegetable oil for cooking
  • Honey/ maple/ date syrup for serving

Instructions

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together milk, egg, butter, and vanilla.
  • Add the wet ingredients to the dry ingredients, then add the dried figs. Stir until just combined and do not overmix.
  • Heat a pan over low-medium heat and brush with oil.
  • Spoon a 1/4 cup batter into the pan and allow to cook for about 2 minutes, or until golden brown, on each side.
  • Repeat the process with the remaining batter.
  • Serve pancakes with fresh figs and drizzle with honey, maple syrup, or date syrup.
