Soak potatoes: Place cut fries in cold water for 20–30 minutes to remove starch. Dry well.
Cook fries: Toss with 1 tbsp olive oil + salt. Air fry at 380°F (193°C) for 15–20 minutes, shaking halfway.
Bread the fish: Follow the dredging method above.
Air fry fish: Place in a single layer, spray lightly with oil. Cook at 400°F (200°C) for 8–12 minutes, flipping halfway.
Serve hot: Pair with fries, lemon wedges, and maybe a yogurt dip or tartar sauce.
