Fluffy Sweet Potato Pancakes

Ingredients

  • 1 1/2-2 cup mashed sweet potato
  • 1 cup egg whites
  • 2 tablespoons honey
  • 1/3 cup protein powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon powder
  • 1 tablespoon butter melter
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1/4 cup flaxseed

Instructions

Sheet pan version

  • Pour the pancake batter onto the parchment-lined baking sheet and smooth it into an even layer
  • Bake for 20 to 24 minutes, or until the pancakes have cooked through, about 20 minutes
  • Remove the pancakes from the oven. Allow them to cool for a few minutes before slicing and serving

Skillet version

  • Add sweet potatoes, white eggs, vanilla, flaxseed meal, protein powder, baking powder, salt, and cinnamon to the blender. Mix for a few seconds until smooth.
  • Heat skillet over medium heat. Add enough butter to cover the pan thinly. Ladle the batter 1/3 cup at a time. Cook pancakes until done and slightly browned on each side. Repeat, cooking pancakes in batches, adding butter to pan as needed.
