Ingredients

Homemade Risoles Wrappers

  • 100 g all-purpose flour
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon unsalted butter melted

Ham, Egg, and Cheese Filling

  • 2 hard-boiled eggs each cut into 6 slices
  • 2 –3 slices ham cut into pieces similar in size to the egg slices
  • Mozzarella cheese cut into pieces similar in size to the ham

Breadcrumb Coating

  • 1 large egg beaten
  • 3 cups breadcrumbs
  • Oil for deep-frying (if frying)

Instructions

Make the Homemade Risoles Wrappers

  • In a large mixing bowl, whisk together the flour, salt, eggs, milk, and melted butter until the batter is smooth and free of lumps.
  • Heat a lightly greased nonstick skillet over medium heat. Pour approximately 1/4 cup of batter into the skillet, immediately tilting and swirling the pan to spread the batter into a thin, even layer.
  • Cook until the underside is lightly golden and the edges begin to lift, about 1–2 minutes. Carefully loosen the wrapper with a spatula, flip, and briefly cook the other side.
  • Transfer the cooked wrapper to a plate and repeat with the remaining batter. Let the wrappers cool slightly before filling.

Assemble the Risoles

  • Lay one crepe wrapper flat on a clean work surface. Place a piece of ham, a slice of hard-boiled egg, and a piece of mozzarella near the lower center of the wrapper.
  • Fold the bottom edge over the filling, fold both sides inward, and roll into a neat envelope-shaped pocket. Repeat with the remaining wrappers and filling.

Coat the Risoles

  • Place the beaten egg in a shallow bowl and the breadcrumbs in a separate bowl.
  • Dip each assembled risoles into the beaten egg, allowing any excess to drip off, then gently coat it with breadcrumbs on all sides.
  • Arrange the coated risoles on a plate or tray and refrigerate for about 1 hour to help the coating set.

Cook the Risoles

  • Option 1: Bake
  • Preheat the oven to 375°F (190°C). Arrange the risoles on a lightly greased or parchment-lined baking sheet.
  • Lightly brush or spray the risoles with oil to encourage browning. Bake for 30–35 minutes, or until the coating is golden and crisp.
  • Option 2: Deep-Fry
  • Heat frying oil in a deep skillet or pot to approximately 350°F (175°C).
  • Carefully fry the risoles in batches, turning as needed, until golden brown and crispy on all sides.
  • Transfer to a wire rack or paper towel-lined plate to drain excess oil. Let cool slightly before serving.
  • Serve warm with peanut sauce, sambal, or your favorite dipping sauce.

Notes

Homemade wrappers: Spread the batter as thinly as possible without tearing. A nonstick skillet makes the delicate wrappers easier to handle.
Mozzarella: The original recipe doesn't specify a quantity. Cut enough pieces to match the number of risoles you're making, using approximately one piece per wrapper.
Make ahead: Assemble and bread the risoles in advance, then refrigerate until ready to cook.
Freezer-friendly: Freeze the assembled, breaded risoles in a single layer until firm, then transfer to a freezer-safe container. Thaw in the refrigerator before cooking using the recipe instructions.
Baking vs. frying: Deep-frying generally produces a more evenly golden, crisp coating. Baking is a convenient alternative, although the texture and browning may differ.
Serving: Peanut sauce or sambal makes a delicious accompaniment, but these risoles are flavorful enough to enjoy without dipping sauce.
