Homemade Rolled Ice Cream

Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 tablespoons granulated sugar
  • Pinch of kosher salt
  • 2 tablespoons Amaretto cherry liqueur optional
  • cups fresh sweet cherries pitted and chopped

  • Crushed Oreo cookies
  • Rainbow sprinkles
  • Toasted almonds or pistachios

Instructions

  • In a mixing bowl or large measuring cup, whisk together the heavy cream, milk, sugar, salt, and Amaretto (if using) until the sugar dissolves.
  • Pour the mixture onto a pre-chilled ice cream roll pan.
  • Scatter the chopped cherries evenly over the cream mixture.
  • Using the ice cream spatulas, chop and fold the cherries into the cream while spreading the mixture into a thin, even layer.
  • Continue mixing until the cherries are finely incorporated and the mixture is completely frozen.
  • Use a flat scraper to gently roll the frozen ice cream into rolls.
  • Transfer the rolls to serving bowls or cups and top with your favorite ice cream sundae toppings. Serve immediately.

Notes

No Amaretto?
Simply omit it or substitute with 1 teaspoon vanilla extract.
Freeze the Pan First
A properly frozen ice cream pan is essential for creating smooth rolls.
