Ingredients

Choux Pastry

  • 100 g unsalted butter
  • 250 ml water
  • 1 teaspoon salt
  • 130 g cake flour
  • 3 medium eggs at room temperature

Pumpkin Maple Cream

  • 1 cup cold heavy whipping cream
  • 2/3 cup pumpkin puree
  • 4 tablespoons maple syrup
  • 1 tablespoon confectioners’ sugar
  • 1 teaspoon vanilla extract

For Topping

  • Dulce de leche for drizzling

Instructions

Make the Choux Pastry

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Combine the butter, water, and salt in a medium saucepan. Bring to a boil over medium heat.
  • Reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.
  • Continue cooking and stirring for 1–2 minutes to remove some of the excess moisture.
  • Remove from the heat and let the dough cool for about 5–10 minutes.
  • Add the eggs one at a time, mixing thoroughly after each addition. The finished dough should be smooth, glossy, and thick enough to hold its shape.
  • Drop tablespoon-sized portions onto the prepared baking sheet, leaving about 2 inches between each.
  • Bake for 25–30 minutes, or until puffed and deeply golden. Avoid opening the oven during the first 20 minutes.
  • Transfer to a wire rack. Pierce each puff with the tip of a small knife to allow steam to escape, then cool completely before filling.

Make the Pumpkin Maple Cream

  • Add the cold heavy cream and confectioners’ sugar to a large bowl. Whip until medium peaks form.
  • In a separate bowl, stir together the pumpkin puree, maple syrup, and vanilla until smooth.
  • Gently fold the pumpkin mixture into the whipped cream until evenly combined. Don’t overmix, or you’ll knock the air out of the cream.
  • Refrigerate until ready to use.

Assemble

  • Once completely cool, slice the cream puffs in half or make a small opening in the bottom of each puff.
  • Spoon or pipe the pumpkin cream into each shell.
  • Drizzle with dulce de leche just before serving.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling. Pie filling already contains sugar and spices and will change both the sweetness and consistency.
  • If the pumpkin puree looks particularly watery, blot it briefly with paper towels or strain it first. This helps keep the whipped filling fluffy.
  • Fill the puffs close to serving time for the crispiest shells. Filled choux gradually softens in the refrigerator.
  • Unfilled cream puff shells can be made ahead and refreshed for a few minutes in a low oven before cooling and filling.
