Sheet Pan Mushroom Fajitas

Sheet Pan mushroom fajitas are not only super easy but also packed with healthy veggies and supercharged with spices. They are the perfect fun recipe to bust out for a weekend gathering, sports night suppers, or family fajita night.

Ingredients

  • 4 cups sliced mushrooms
  • 1 small red onion sliced
  • 2 cups bell pepper julienned or diced
  • Homemade fajita seasonings
  • 1 tablespoon olive oil
  • Lime wedges
  • Fresh cilantro finely chopped

Instructions

  • Preheat the oven to 400F. Line a sheet pan with parchment paper
  • Transfer the mushrooms, bell peppers, and onion to a sheet pan, then mix with olive oil and fajita seasoning (homemade or store-bought taco seasoning mix)
  • Spread vegetables evenly and bake for 15-20 minutes, or until they all turn a nice brown color
  • Squeeze fresh lime juice over the vegetables and sprinkle with fresh cilantro
