Heat the oil in a large pan over medium heat. Add sweet potatoes and sprinkle some salt. Stir well. Cover and let them sweat for 6-8 minutes
Add chorizo, garlic powder, smoked paprika, salt, and pepper, then cook for another 3-5 minutes, or until chorizo is cooked through
Meanwhile, fry an egg in a separate pan (or later)
Spoon the sweet potato mixture over warmed tortillas. Top with salsa, sour cream, avocado, cheese, and fried egg
