30-minute Breakfast Tacos

I’m gonna be completely honest, these easy and tasty 30-minute breakfast tacos have more flavor than you can ever imagine and are THE BEST sweet potato breakfast tacos you will ever try. What a great way to say hello to your day.

Ingredients

  • 2 medium-size sweet potatoes cubed
  • 4 ounces Mexican chorizo
  • 1 tablespoon oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt, black pepper to taste
  • 4 eggs sunny-side up
  • 8 tortillas warmed
  • 1 cup Mexican-style cheese blend

Additional toppings

  • Salsa
  • Sour cream
  • Avocado

Instructions

  • Heat the oil in a large pan over medium heat. Add sweet potatoes and sprinkle some salt. Stir well. Cover and let them sweat for 6-8 minutes
  • Add chorizo, garlic powder, smoked paprika, salt, and pepper, then cook for another 3-5 minutes, or until chorizo is cooked through
  • Meanwhile, fry an egg in a separate pan (or later)
  • Spoon the sweet potato mixture over warmed tortillas. Top with salsa, sour cream, avocado, cheese, and fried egg
