My go-to breakfast has always been avocado toast, an avocado smoothie with coffee, and a bowl of oatmeal. There was a period of time when I had eggs and avocados for breakfast every single morning for months. And I needed some variations and thought about tacos for breakfast.
Tacos for breakfast are perfect for the whole family to enjoy. It’s an ideal weekend brunch because you can customize the ingredients and have fun or go crazy with it.

The ingredients
- Tortillas. You can use flour tortillas or corn tortillas
- Sweet potato or you can substitute with potatoes
- Sausage or chorizo, your choice
- Fried eggs or scrambled eggs
- Garlic powder, smoked paprika, salt, pepper for seasonings
- Toppings: salsa, sour cream, avocado, cheese
How to make easy 30-minute breakfast tacos
- Heat the oil in a large pan over medium heat. Add sweet potatoes and sprinkle some salt. Stir well. Cover and let them sweat for 6-8 minutes
- Add chorizo, garlic powder, smoked paprika, salt, and pepper, then cook for another 3-5 minutes, or until chorizo is cooked through
- Meanwhile, fry an egg in a separate pan (or later)
- Spoon the sweet potato mixture over warmed tortillas. Top with salsa, sour cream, avocado, cheese, and fried egg
Sausage for breakfast tacos
I prefer a mild breakfast sausage or a spicy one. Another option is bacon! Make sure you make them crispy for some extra crunch. Or add Crunchmaster crackers on top!
Veggies for breakfast tacos
Grilled onion is always my favorite, along with grilled bell peppers, zucchini, or spinach.

You can make breakfast tacos ahead by preparing and cooking the sweet potatoes and meat.
You can also turn this 30-minute breakfast taco to an easy breakfast burrito. To do that, you will need a bigger size of tortillas so you have enough room to roll.

30-minute Breakfast Tacos
Ingredients
- 2 medium-size sweet potatoes cubed
- 4 ounces Mexican chorizo
- 1 tablespoon oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt, black pepper to taste
- 4 eggs sunny-side up
- 8 tortillas warmed
- 1 cup Mexican-style cheese blend
Additional toppings
