Lemon Ricotta Pancakes

These Lemon Ricotta Pancakes are the perfect balance between sweet and tart.

Ingredients

  • 1 lemon
  • 1 cup ricotta cheese
  • 2/3 cup milk
  • 2 eggs
  • 3 tbs granulated sugar
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 2 tbs unsalted butter
  • Blueberries for garnish
  • Maple syrup or powder sugar for serving

Instructions

  • Combine all ingredients in a bowl. Whisk together until just combined.
  • Brush the hot griddle with unsalted butter.
  • Pour about ΒΌ cup measure of batter on the griddle and cook on both sides until light golden brown. Repeat until no batter remains.
  • Top with fresh blueberries and sprinkle with powder sugar or maple syrup.
