Spring is here and I am running out of patience. I want to be outside …running, biking, etc. But the weather is too cold and I still need to wear a warm jacket. I miss sitting outside on the patio and finishing my work there. It’s so nice watching the neighbor’s dogs running around and bunny rabbits jumping in our backyard. That’s how I like my spring.
I’ve been doing spring cleaning inside our home lately. I started with the storage area and the kitchen, which took most of my time. The wardrobe came next. I am quite pleased with the results. Lemon Ricotta Pancakes
Ingredients
- 1 lemon
- 1 cup ricotta cheese
- 2/3 cup milk
- 2 eggs
- 3 tbs granulated sugar
- 1 cup all purpose flour
- 1/4 tsp salt
- 2 tbs unsalted butter
- Blueberries for garnish
- Maple syrup or powder sugar for serving
Instructions
- Combine all ingredients in a bowl. Whisk together until just combined.
- Brush the hot griddle with unsalted butter.
- Pour about ¼ cup measure of batter on the griddle and cook on both sides until light golden brown. Repeat until no batter remains.
- Top with fresh blueberries and sprinkle with powder sugar or maple syrup.

I looooove ricotta pancakes. So creamy and fluffy at the same time. I typically don’t love lemon flavor but it’s so perfect with blueberry so I will definitely enjoy these with a blueberry syrup
