Date-Apple Salad

This delicious date-apple salad is dressed with a maple vinaigrette and topped with blueberries, raisins, and walnuts. A crunchy, fresh, and hearty "main meal" salad that will keep you full for hours and make a festive addition to any menu!

Ingredients

  • 4 cups mix baby lettuce
  • 6 Medjool dates julienne strips
  • 1 apple core, and thinly sliced
  • 1/4 cup raisins and walnuts
  • Blueberries for garnish

Optional:

  • 1/4 cup matchsticks carrot julienne strips
  • 1/4 cup roasted corn
  • 2 stalks celery thinly sliced

Maple Vinaigrette

  • 4 tablespoons maple syrup
  • 1 tablespoon dijon mustard
  • 2 tablespoons rice wine vinegar
  • 4 tablespoons olive oil
  • Black pepper

Instructions

  • In a small lidded jar, combine the ingredients for maple vinaigrette. Tightly cover and shake hard to mix well.
  • Combine the salad and dressing in a bowl, and toss to coat well. Serve immediately.
