To say I’m addicted to these Chicken Adobo Fries is an understatement because I’ve been enjoying them 3 times a week! Now it’s your turn to enjoy them too!
* 1 to 2 tablespoons chipotle peppers in adobo sauce
* 1 tablespoon lime juice
* Pinch of garlic powder
* Pinch of salt
* Ground black pepperto taste
For the Fries
* 1 package frozen curly fries
* Srirachaoptional
* Sliced green onionsfor garnish
* Lime wedgesfor serving
Instructions
Make the Chicken Adobo
Add the shredded chicken, soy sauce, vinegar, garlic, bay leaf, black pepper, and water to a skillet.
Cook over medium heat for 5 to 7 minutes, stirring occasionally, until the chicken is heated through and most of the liquid has reduced.
Remove and discard the bay leaf.
Make the Chipotle Mayo
Add the mayonnaise, chipotle peppers, lime juice, garlic powder, salt, and black pepper to a small blender or food processor.
Blend until smooth. Add a teaspoon of water if you prefer a thinner sauce for drizzling.
Assemble the Fries
Bake or air-fry the curly fries according to the package directions until crisp.
Arrange the fries on a serving platter or oven-safe skillet.
Top with the warm chicken adobo. Drizzle with chipotle mayo and sriracha, if using.
Garnish with green onions and serve with lime wedges.
Notes
Keep the fries crisp. Assemble the dish immediately before serving so the chicken and sauce do not make the fries soggy.Shortcut option. Use leftover rotisserie chicken, then simmer it briefly with the adobo seasonings.Control the heat. Start with 1 tablespoon chipotle peppers and increase according to taste.Higher-protein version. Use 3 cups shredded chicken and serve the fries as four meal-size portions instead of one large appetizer.
