To say I’m addicted to these Chicken Adobo Fries is an understatement because I’ve been enjoying them 3 times a week! Now it’s your turn to enjoy them too!
It’s Wednesday and I’m completely stuffed after eating spicy hot chicken wings and nuggets, and a few happy hour nachos from the bar with some friends. I can’t believe I’m still wanting to talk about food with how absolutely stuffed I am. Sweat pants here I come!
So friends. Let’s regroup here.
I know it’s football season and we’re all caught up in it but there’s something I need to share with you. These Chicken Adobo Fries are da bomb! Period. The recipe for these fries was inspired by a food truck. The menu on the board did not say much but the title itself convinced me to give this a try a few weeks ago when we happened to be at Off the Grid. In case you are wondering, Off the Grid is a mobile food truck festival in San Francisco, which travels to different locations and serves a variety of food. It is similar to a night market or a bazaar, where a group of vendors gather in an outdoor space on certain days of the week. So there I was with the hub and I decided to give Chicken Adobo Fries a try. Little did I know I would fall in love right then and there!
A few days later, I went out with my lunch club at work and spotted a pile of umami fries. I knew I had to order them. It’s pretty much criss cut waffle fries with miso-coconut braised pork, red sauce, garlic aioli, masago, and green onions. I finished them in a split second, and by the time I got home, I realized I had quickly become obsessed with this new saucy fries trend. I just could not stop thinking about it all day long. So that weekend, I decided to make a batch at home! Gosh! I did not regret it. Adding chicken and adobo sauce on top of a giant pile of fries was simply awesome! Sometimes it’s just a simple little thing that can jazz up your life, like that adobo sauce. These are the perfect appetizer/snack for game day. You’re going to want to make extra because you don’t want to have to run out for another bag of fries while busy watching football on the big screen. Chicken Adobo Fries
Ingredients
- Curly potato fries
- Roasted chicken shredded
- Sriracha optional
- Lime juice optional
Chipotle Mayo Sauce:
- 1/4 cup light mayonnaise
- 2 tablespoons chipotle in adobo sauce
- 1 tablespoon lime juice
- Ground black pepper
- Pinch of garlic powder
- Pinch of salt
Instructions
- Bake curly potato fries according to package directions.
- Place all ingredients for chipotle mayo sauce in a blender. Puree until smooth and chipotle are completely chopped.
- Arrange potatoes in a serving skillet, top with shredded chicken. Drizzle chipotle mayo sauce and sriracha on top. Add lemon for garnish.

Off the Grid sounds a bit like Smorgasbord in NYC. Basically just a roaming collection of amazing food trucks! We went once, and it was incredible…and it makes me wish we lived closer to the city. (I don’t even know if our area has enough food trucks to create a ‘collection’!)
