Easy Ginger Fried Rice (10-Minute Better Than Takeout Recipe)

Ingredients

  • 2 tablespoons avocado oil or neutral cooking oil
  • 1 teaspoon sesame oil
  • 2 garlic cloves minced
  • 2 tablespoons fresh ginger julienned
  • 2 eggs lightly beaten
  • 4 cups day-old cooked jasmine rice
  • 2 tablespoons tamari or low-sodium soy sauce
  • 1 tablespoon fish sauce optional
  • ¼ teaspoon white pepper
  • 3 green onions thinly sliced

Instructions

  • Heat a large wok or skillet over medium-high heat.
  • Add the cooking oil and sesame oil.
  • Once hot, add the garlic and ginger. Stir-fry for about 30 seconds, just until fragrant. Be careful not to let the garlic brown.
  • Push the aromatics to one side of the pan and pour in the beaten eggs. Scramble until they’re just set.
  • Add the cold cooked rice, breaking up any clumps with your spatula.
  • Pour in the tamari and fish sauce, then continue stir-frying for 2 to 3 minutes until the rice is evenly coated and heated through.
  • Season with white pepper and stir in the green onions.
  • Serve immediately.

Notes

  • Use day-old rice. Cold rice separates easily and gives you the best fried rice texture.
  • Don’t overcrowd the pan. If doubling the recipe, cook in batches for the best results.
  • Make it a meal. Add cooked chicken, shrimp, tofu, or edamame for an easy protein boost.
