Hong Kong-style Crispy Noodles

Ingredients

Crispy noodles

  • 1 package Fortune noodle
  • 4 tablespoons oil

Sauce

  • 1 tablespoon oil
  • 3 garlic finely minced
  • 1 baby bok choy chopped into 1 inch pieces
  • 2 cups chicken stock
  • ¼ cups carrots julienned
  • ¼ cups sliced zucchini
  • ¼ cups sliced lap cheong or beef slices
  • 1 tablespoon cornstarch dissolve with 2 tablespoons of water

Instructions

Crispy noodles

  • Heat a thin layer of oil in a large pot over medium-high heat. Gently separate the noodles and add to the pot in a single, even layer. Coat and toss the noodles in oil for 2-4 minutes, or until lightly browned and crispy. Transfer to a paper towel-lined plate and set aside

Sauce

  • Heat the oil in a wok. Saute garlic until brown, and add the meat and cook for 2-3 minutes
  • Add the vegetable and cook for another 3-4 minutes
  • Add the broth and sauce, and let it simmer; then pour the cornstarch to thicken the sauce. Serve it over crispy noodles
