And today, I’m here with another delicious recipe from my childhood. Hong Kong-style crispy noodles recipe that is simply delicious and so much better than takeout.
What is crispy noodle
Crispy noodle or e-fu noodle or yi mian is a type of egg noodle that is first cooked in boiling water and deep-fried twice. It has a spongy and chewy texture when you stir-fry it and crispy texture skin like crackers once it’s deep-fried. You can get this in the Asian grocery market; however, I will share my own version aka when you don’t have time to shop and use Fortune noodles which you can get at Safeway, Fred Meyer, QFC, Albertson’s, Associated Stores, Cub Foods, United Supermarkets, Roche Bros, Meijer, Shaw’s, Stop N Shop, Price Rite, Shop Rite, Wakefern, Price Chopper, Giant, HEB, Walmart and Grocery Outlet.

The ingredients
Here is the best part of this e-fu noodles recipe. You can use whatever ingredients you have. I mean clean your fridge in a delicious way. So, to make Hong Kong-style crispy noodles, you will need:
- Fortune yakisoba noodles
- Vegetables: bok choy, carrot, zucchini
- Meat: beef, chicken, or lap cheong
- Broth: chicken broth, vegetable broth
- Garlic to make this dish more delicious
- Cornstarch to thicken the sauce
How to make crispy noodles
You can get a ready-made e-fu noodle at any Asian grocery store. With Fortune noodles, heat a thin layer of oil in a large pot over medium-high heat. Gently separate the noodles and add to the pot in a single, even layer. Coat and toss the noodles in oil for 2-4 minutes, or until lightly browned and crispy. Transfer to a paper towel-lined plate and set aside.

How to make the sauce or gravy
Heat the oil in a wok. Saute garlic until brown, and add the meat and cook for 2-3 minutes. Add the vegetable and cook for another 3-4 minutes. Add the broth and sauce, and let it simmer; then pour the cornstarch to thicken the sauce. Serve it over crispy noodles.
How to make crispy noodles in an air fryer
Unwrap the noodle and soak in hot water for 5 minutes. Drain the water and toss the noodles in a tablespoon of oil. Gently separate the noodles and add them to a foil-lined basket in the air fryer in a single, even layer. Air fry the noodles for 10 minutes at 350C, or until crispy. Take the basket out halfway thru cooking to toss the noodles and place it back inside for air frying.

Make ahead
Yes, you can make it ahead of these crispy noodles so you just need to pour the sauce when you’re ready to eat it. Keep crispy noodles in an airtight container in the freezer for up to 4 months.
Try this vegetarian option
Add fried tofu, eggplant, and mushrooms to substitute the protein or meat.

- 1 package Fortune noodle
- 4 tablespoons oil
Sauce
- 1 tablespoon oil
- 3 garlic finely minced
- 1 baby bok choy chopped into 1 inch pieces
- 2 cups chicken stock
- ¼ cups carrots julienned
- ¼ cups sliced zucchini
- ¼ cups sliced lap cheong or beef slices
- 1 tablespoon cornstarch dissolve with 2 tablespoons of water
