I am finally back after what it seems like a never-ending trip. We were stranded at the airport in Dubai for 10 hours before got on the plane for 16 hours with not just one, two, three, or four, but five…FIVE CRANKY BABIES. Oh my!
And as soon as I got my luggage, I knew I was not ready for this cold and rainy weather. I need soup. I need comfort food. I need toast. So, questions for you. What was on the last slice of toast you ate?

Grilled Mushroom Toast.
Just when you thought toasts were boring… Let me introduce you to these grilled mushroom toasts. They take less than 30 minutes to put together and yet are packed with so much flavor, you would not believe it!
A highlight of February right there. Highlight. Of. The. Month. It’s gluten-free (I’m using gluten-free bread), no processed foods, and plant-based so it’s perfect for people with celiac disease or gluten intolerance. I loved these so much that I made them two days in a row before I left. So glad I still keep some bread slices from Little Northern Bakehouse Bread.

What I like the most about this brand is their dedication to making healthier, gluten-free bread without sacrificing the taste or texture with a line-up of plant-based, non-GMO products. So to celebrate the upcoming National Toast Day on February 23, I made this Grilled Mushroom Toast. To fuel my system back to normal, I’ve made this easy, toast recipe that can be made at a moment’s notice. Grilled. Mushroom. Toast. It’s exactly what it sounds like. Except it also comes with cheese in between. Tell me, what’s your best spin on a grilled cheese sandwich?
And if you don’t want to say you’re having a mushroom toast for dinner?
Just keep it on one slice and call it an opened face mushroom melt. So just food for thought.
Ingredients
- 2 tablespoons unsalted butter more as needed
- 1/2 small white onion thinly sliced
- 1 pound thinly sliced white or cremini mushrooms
- 1 teaspoon chopped thyme
- 2 small garlic cloves minced
- Salt and pepper
- 2 slices provolone
- 4 slices bread for toasting
Instructions
- Heat butter in a pan. Sautéed the garlic and onion for 3-5 minutes. Add the mushrooms and thyme for another 3-5 minutes or until golden. Then adjust with salt and pepper.
- Lay a slice of cheese on 2 slices of bread and 1/4 of mushrooms mixture. Cover with the remaining slices of bread.
- Heat a little bit of butter in a pan. Then grill sandwiches on each side until they are well golden and the cheese has melted.
