These creamy keto strawberry popsicles are made with fresh strawberries and just a handful of simple ingredients. An easy frozen treat for hot summer days.

Every summer I become a little obsessed with strawberries. Not because they’re trendy. Because they’re everywhere.
The farmers markets are overflowing, grocery stores suddenly have the sweetest berries of the year, and somehow a carton always finds its way into my shopping cart.
Some become smoothies. Some disappear before I even get home. And the rest usually end up in popsicle molds.
These strawberry popsicles came together on one of those afternoons when turning on the oven wasn’t even a consideration. I wanted something cold, creamy, and refreshing, but without making a complicated dessert.
A few simple ingredients later, the freezer did the rest of the work. The best recipes are often like that.
Minimal effort. Maximum reward. And if you happen to be eating keto or watching your carbs, these fit right in without feeling like you’re giving anything up.

Why You’ll Love This Recipe
- Fresh strawberry flavor.
- Naturally keto-friendly.
- Ready for the freezer in about 10 minutes.
- No ice cream maker needed.
- Perfect for hot summer afternoons.
Strawberry Season Is My Favorite Season
There’s something about ripe strawberries that makes me want to put them in everything.
Cake.
Smoothies.
Ice cream.
Even salads.
But popsicles might be my favorite because they let the fruit do most of the work. That beautiful pink color? No food coloring. Just strawberries being strawberries.

Keep It Simple
One thing I’ve learned over the years is that frozen desserts don’t always need a long ingredient list. Sometimes a handful of good ingredients is enough.
The strawberries bring freshness. The cream makes everything silky. And after a few hours in the freezer, you’ve got something that tastes far more impressive than the amount of work it actually took.
Those are my favorite kinds of recipes. Fun Variations

Want to change things up?
Try adding:
- Fresh blueberries
- Coconut flakes
- Dark chocolate drizzle
- Chopped walnuts
- Lemon zest
Every version still starts with sweet strawberries. Everything else is just bonus.

Helpful Tips
- Use ripe strawberries for the best flavor.
- Blend until completely smooth.
- Freeze overnight for the creamiest texture.
- Run the molds under warm water for a few seconds before removing.

A Little Catch-Up Before You Go
Every summer my freezer slowly fills up with little experiments. Some become favorites. Some quietly disappear forever.
These strawberry popsicles have managed to stick around for years, mostly because they’re the kind of treat that doesn’t ask much from you.
A few minutes in the kitchen. A little patience while they freeze. Then a cold, creamy reward waiting for you after dinner… or let’s be honest, sometimes before dinner too.
I won’t judge. Thanks for catching up with me.

Keto Strawberry Popsicles
Ingredients
- 1/4 cup finely chopped strawberries
- 1 small pack or half of a large pack strawberry sugar fat-free Jello
- 1 cup heavy cream
- 1 cup boiling hot water
Topping:
- 1/4 cup crushed walnuts
- 1/4 cup Lily’s baking chocolate chips
- 1-2 tablespoons of heavy cream
Instructions
- Mix boiling hot water with Jello until fully dissolved.
- Add in cream and strawberries and mix completely. Pour into your popsicle molds and freeze for 5 hours minimum.
- When they are frozen, take the chocolate chips and melt in the microwave for 30 seconds – 1 minute. Stir until completely melted. Add cream 1 tablespoon at a time. This will thin out the chocolate and make it easier to drizzle.
- Drizzle popsicles with chocolate and walnuts and put back in the freezer for about 30 minutes or until the chocolate hardens.
