Martabak is one of my favorite street food in Indonesia. There are two types of martabak, sweet and savory. The sweet version is called martabak manis and has a combination of chocolate, peanut, and sesame seeds or grated cheese. The savory version is called martabak telor or martabak Mesir. It comes with ground beef, duck eggs, and lots of green onion.
Both martabak are widely available at night and served as post-dinner snacks or supper. Yes, we love heavy carbs before bed!

The history of martabak
No one knows the origin of martabak specifically. However, rumor has spread it could be derived from mutabbaq which means folded in Arabic or mutabar in India.
The ingredients
I use a short-cut recipe for the wrapper, which is egg roll wrappers. However, here’s a list of ingredients you need for the filling:
- Ground beef as the main ingredient
- Onion. You can use either white or yellow onion
- Eggs. Indonesian martabak usually uses duck eggs; however, chicken eggs work
- Green onions and lots of green onion
- Curry powder, salt, sugar, and pepper for seasonings
- Egg roll wrappers to wrap the filling
How to make martabak telor
- Thaw the wrapper so they are flexible enough to handle
- Saute the onion for 3-5 minutes. Add ground beef, curry powder, salt, sugar, and pepper. Cook until the meat is cooked through. Let it cool
- Whisk the eggs and green onion. Add ground beef to the mix
- Lay 1 wrapper. Add about 1-2 tablespoons of beef to the center of the wrapper. Wet all sides of the wrapper with water and fold the wrapper like folding an envelope
- Heat up the oil (make sure it’s not too hot) and fry the martabak until golden brown on both sides
Best way to serve martabak Mesir
The best companion to martabak mesir is acar timun.
Air fryer martabak
You can use an air fryer to cook martabak instead of frying them. To do so, place them in an air fryer and make sure to spread them out. Cook at 350F for 10 minutes. Please note each air fryer has a different setting and you might need less or more time to cook them.
Storing
Store them in a container in the fridge for up to 3 days. And when you’re ready to eat it, you can reheat them in an air fryer for 5-8 minutes at 350F or on a stovetop with a bit of oil.
