Quesadillas are always a favorite at our home. It’s easy to make, delicious, and customizable. Like Taco Tuesday, you can expect quesadillas at our house on weekdays. And this recipe can’t be any easier. Air Fryer Steak Quesadillas. You’ll love how easy it is to make an air fryer quesadilla—Crunchy on the outside and melty on the inside.
The ingredients
Making quesadillas at home is extremely easy and customizable. Here’s a list of ingredients you need to make with beef steak.
- Tortilla. Flour tortillas work best for quesadillas, and if you’re on a keto diet, you can always use low-carb tortillas
- Steak. Flank steak and skirt steak are my favorite cuts, or you can also use protein of your choice, such as grilled chicken
- Cajun seasoning or taco seasoning to give extra flavor
- Butter to hold the cajun seasoning
- Cheese. I use a combination of Mexican blend, mozzarella, and cheddar
- Mushrooms, onion for filling. You can also add bell peppers to the mix

How to make quesadillas in an air fryer
- Sprinkle Cajun seasoning or your favorite steak seasoning on both sides of the steak
- Place in a greased air fryer basket at 350° and cook for 6-8 minutes for medium-rare, 8-10 for well done. Once the steak is cooked to your liking, allow it to rest for 5 minutes. This helps to seal the juices in. Then cut the steak into bite-sized pieces. You can cut the steak into bite-size pieces and cook it in the air fryer. However, I like keeping the steak whole if I can so that it locks in the juices in the steak during the cooking process
- Spread butter over the entire tortilla in an even layer on a tortilla. This allows the cajun seasoning to stick to it and gives it a nice golden brown color once cooked
- Sprinkle the cajun seasoning over the butter and an equal amount of your favorite cheese or whatever you have on hand all over the quesadilla. I use a combination of Mexican blend, mozzarella, and cheddar
- Top the cheese with mushrooms, onions, and steak on half of the side of the quesadilla. The cheese will help melt on top of the steak and keep all of the ingredients in place. Fold the tortilla in half
- Place in a greased air fryer basket and cook at 350° for 6-10 minutes. You may want to flip halfway through to ensure both sides of the tortilla cook evenly
No air fryer? Not a problem. You can always use a pancake griddle or griddle pan and cook quesadillas over medium heat since it burns easily.

To reheat, pop them in the oven for several minutes to warm them up. Don’t forget to flip so you get a crunchy texture on both sides. Another option is to microwave them for 1 minute; however, you won’t get the crunchy texture.
