Coconut is another ingredient in the parade of my favorites. This easy coconut pandan syrup recipe is simple, ready in minutes, and with just a few ingredients. It’s so refreshing and makes a perfect treat for summer.

I make pandan syrup all summer long. It’s always in the fridge and ready when hot weather strikes. If you’re familiar with Southeast Asian cooking, pandan is no longer foreign. I’m using it in some recipes for coconut rice and ginger tea. It has that aromatic smell that elevates a dish from good to very good. This syrup is one of them.

Ingredients to make coconut pandan syrup
Like pandan syrup, you only need basic ingredients to make this simple syrup at home.
- Pandan. And fresh or frozen pandan leaves only
- Sugar to sweeten this homemade syrup
- Coconut water, unsweetened

How to store
You can store coconut pandan syrup in an airtight container in the fridge for up to two weeks. Do not let it sit at room temperature, or it will go bad.

How to use
I like to make basil seeds drink with this pandan syrup. Add basil seeds, syrup, and water to a tall glass. Let it sit for a few minutes to let the basil seeds grow, then add ice cubes.

Coconut Pandan Syrup
Ingredients
- 40-45 fresh or frozen pandan leaves about 2 cups full of loosely cut leaves
- 1 cup sugar granulated sugar brown sugar, or gula melaka
- 1 cup coconut water
Instructions
- Rinse the pandan leaves to remove the dirt and cut off the root ends. Cut the leaves into strips. Some places have pandan in small strips, so you don’t have to do this
- Add pandan leaves and coconut water to a blender and process until the leaves are completely pulverized
- Strain the extract with a strainer or cheesecloth, then pour it into a pot along with sugar
- Heat on medium till the sugar has all dissolved. Allow the syrup to cool, then store it in the fridge in an airtight container
