Usually, it works out that I make things, save them in a folder, wait a while…or a bit longer, think when I should post them until I forget about them, then suddenly remember about it a few weeks later when I scramble for something to post. The ingredients
- All-purpose flour. Unbleached flour will produce a slightly more chewy texture than bleached, but either one will work
- Butter. Unsalted and softened to room temperature
- Egg. Keep it at room temperature
- Sugar, salt, cinnamon. Use granulated sugar and ground cinnamon for texture
- Vanilla extract. One full teaspoon for great flavor

The Best Homemade Snickerdoodle Bars
Ingredients
- 1/2 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg room temperature
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract can be replaced with 1/2 teaspoon almond extract
- 1/2 teaspoon salt
Topping:
- 3 tablespoons granulated sugar
- 1 teaspoon or more ground cinnamon
Instructions
- Preheat the oven to 350F and line an 8×8 baking pan with parchment paper. Set aside.
- In a bowl, mix together the butter and sugar until combined.
- Add egg and vanilla until fully mixed.
- Add flour and salt to the bowl. Fold into the mixture until combined.
- Evenly spread the batter into the baking pan.
- In a bowl, stir together sugar and cinnamon for topping. Sprinkle on top of the cookie batter and bake for 25-30 minutes or until the cookie is lightly browned but not hard and over-baked.
- Remove from the oven and allow to cool in the pan for 10-15 minutes before removing and cut into 12 bars.
