Halloween is coming. Oh, Halloween will be here next week, and unlike previous years, this year might change a bit. Like uhm…do we need to dress up extra this year or pretend to be a surgeon on duty, so a mask is actually part of the uniform? Either or, Halloween is always filled with candies, chocolates, and all sugary treats.
Unlike previous years where I made this delicious Bloody Berry Cake, this year I decided to go easy and creative with Halloween Sandwich Cookies instead. Super easy that you only need 5 ingredients for these cookies.

- Eggs
- Vegetable oil
- Vanilla icing
- Eyeball candy

Halloween Sandwich Cookies – 5 Ingredients
Ingredients
- 1 box vanilla cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1 cup of vanilla icing
- Eyeball candy
Instructions
- Make the cookie batter by mixing oil, cake mix, and eggs or according to the packaging directions. The dough should be thick and mouldable. If it is too thin, add in 2 tablespoons of all-purpose flour.
- Place on a parchment-lined tray and bake for 6-8 minutes at 350F or until the cookies have cracked in them. Remove from the oven and let cool.
- Pipe icing on one cookie and place another cookie to create a sandwich.
- Place two eyeballs in the icing.
