These Meyer Lemon Cookies are just the thing to cure those wintertime blues.
SPRING! Ah, I wish I could say that. It’s not even close especially since it’s been raining hard all weekend long here in sunny California. Does anyone else get the wintertime blues? But let’s just let winter go on its merry little way, and let’s have some cookies, shall we?
Nope, no chocolate this time. Sorry. But I promise you I have something better.

If there’s one thing I try to avoid, that’ll be laborious baking. As much as I enjoy cookies, I don’t think I have the patience to make the dough, roll the dough, cut the cookies before they go into the oven. I like mine easy peasy, using an ice cream scoop. But it’s Good Cookie Food Bloggers’ Valentine’s Event. And it’s for a good cause. I thought, how hard can it be?
So, I took a breath and started mixing my dough. My first attempt was quite successful. I used almond flour. As a result, so my cookies tasted so good but so damn ugly. My second attempt was way better with less drama as you can see in the pictures here.
Keep the dough in the fridge for easy rolling and use a potato masher to stylize your Meyer lemon cookies. Woot!

Ingredients
- 1 cup unsalted butter room temperature
- 2/3 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg
- 1 tablespoon lemon zest or zest from 1 lemon
- 1 tablespoon lemon juice
- 2 cups all-purpose flour
Instructions
- Preheat the oven to 350F.
- Cream the butter, sugar, and salt in a bowl until light and fluffy.
- Add the egg, lemon zest, and lemon juice. Stir to combine.
- Stir in flour and mix until just combined.
- Scoop out two tablespoon-sized pieces of cookie dough onto the prepared baking sheets. Roll the dough into balls and then gently press them down a little. Use a potato masher to stylize your cookies.
- Bake for 12-15 minutes. The cookies should look done on the outside, but still a little soft on the inside. Remove from the oven and cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling.
