Friends, I have an exciting new at the end of this post. It’s not officially 2019 yet, but my brain has been into the healthy, energized, refresh and reset zone that always comes with a new year. With lots of excitement this year, from this blog changes to this cookbook to the holiday season, and not to mention my upcoming marathon right before Christmas; it’s quite appropriate to get back in business with lots of new, tasty, nutritious, and practical food. Gosh, I get so excited about that combination and I even think of joining a 60-days without refined sugar course. I don’t know how I can cope with that though because dark chocolate is constantly in my mind daily.
But until then, let’s talk about soup. Truffle butter and corn are my two favorite things this season. I remember we hunted for truffle last Christmas from Costco to another, looking for truffle butter that got sold out very fast because it was also on sale. We did not get a lot but it was a good bargain. Thankfully, I managed to steal one more this year and oh boy, it was so good! Truffle butter for my egg for breakfast, truffle butter on my steak, and of course into this corn chowder.
No, I mean it. Amazingly.
And what makes it so special is when you combine these two together in one pot. It’s so good and easy to make.
So here we go. Corn Chowder. 5 ingredients.
Easy. Tasty. Comforting. I don’t even know what to say about this. I mean, I’m sure I could come up with a few more things to jazz it up if you made me, but let’s stick with 5 ingredients for now.
I am using sweet corn in this photo; however roasted corn also works well for this recipe. Just be sure to peel those potatoes.
Can I make this soup in a slow cooker?
Absolutely! Combine the olive oil, onion, corn, potatoes, broth, and milk, and cook on low for 4 hours. Then finish the soup as in step 3. Easy as 1-2-3.

Description
This thick, potato-studded corn chowder is perfect on a cold winter night or to satisfy your summer soup cravings. It is a simple recipe, rich, creamy and velvety smooth. It has been a family favorite for years!
Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 4 cups frozen corn, thawed
- 2 small russet potatoes, peeled and diced
- 2 cups vegetable broth
- 1 cup milk
- Salt
- Freshly ground black pepper
Instructions
- In the stockpot over medium heat, heat the olive oil. Add the onion and cook for 5 minutes.
- Add the corn, potatoes, broth, and milk and bring to a simmer. Cook for 15 minutes.
- Transfer 2 cups of the soup to a blender and purée until completely smooth. Return the puréed soup to the pot. Mix well, season with salt and pepper, and serve.
