- Preheat the oven to 375: oil a 12-count nonstick muffin tin, preferably lined with silicone muffin liners
- Crack all 12 eggs into a bowl and beat well
- Add bacon, chopped bell pepper, hamburger, cheese, jalapenos, and spinach to a bowl, mix well, and season with salt and pepper.
- Use 1/4 cup full with mixture and add to muffin cups
