You guys…I hope you’re done with your shopping! Our weekends have been filled with shopping and holiday festivities lately, and it has been great catching up with old friends. I always love this time of the year because everyone seems much nicer and friendlier. I’m sure you can agree with me too. In addition to the holiday cheer, our kitchen space in the office is always filled with so many goodies, mostly chocolates. (Yum!)
These espresso chocolate cookies are a grown-up version of your classic chocolate chip cookies. Made with ground coffee, this version makes the best cookies for all coffee connoisseurs!

Ingredients for espresso chocolate cookies
- Butter. You will need unsalted butter so it can control the salt content
- Sugar to balance the sweetness of coffee
- Salt to enhance the overall flavor
- Vanilla extract. Always use a good-quality vanilla extract
- Coffee. I highly recommend fresh ground coffee so you don’t get a coarse texture in your cookies
- Flour to provide structure to the cookies
- Baking powder works as a leavening agent to give the right structure
- Egg to promote puffiness while also holding the cookie together during baking
- Chocolate chunks. You can use dark, milk, or white chocolate, or a combination of all
How to make chocolate coffee cookies
- Cream butter, sugar, and vanilla in a bowl using a mixer.
- Add coffee and egg, and mix until fully incorporated.
- Add in flour, baking powder, and salt. Mix well, and do not overbeat.
- Add chocolate chunks and combine the dough using a spatula.
- Chill this dough for at least one hour, preferably overnight.
- When you are ready to bake, preheat the oven to 350 degrees.
- Scoop the dough on a baking sheet pan using an ice cream scoop, spacing 1-2 inches apart.
- Bake for 8-10 minutes or until the edges are slightly golden. Allow cookies to cool completely before you take a bite. For gooey, melty chocolate chunks, serve warm or microwave it for 30 seconds.
Kitchen Tips
Chill the dough overnight for a better texture, making the cookies much more flavorful.
Use good quality coffee for the best result! You can adjust the amount based on your preference for a milder or stronger coffee taste.
Chocolates? Add your favorites to the mix. Dark chocolates, milk chocolates, white chocolates, or make it a combo!
Storing
Store the baked cookies in an airtight container at room temperature for up to a week. You can freeze the cookies in a single layer and then transfer them to a freezer bag for up to 3 months.
