When life gives you lemons, make these Lemon Blueberry Basil Cupcakes. Absolutely the game changer!
I am so glad that Spring has sprung, though some of you might not agree with me. I checked my Instagram the other day and saw snow covering some areas in US. It’s April, didn’t mother nature get the memo already? We’re due for Easter egg hunting game.
Speaking of Spring, I’m so excited to see fresh herbs and greens when I stopped by at the Farmer’s Market. Those colorful and fresh veggies really excite me and I’ve been making a list of various types of salads that I want to try.
But for now, let’s enjoy these cupcakes. This is my first time adding basil to the frosting – never thought this would actually come out super good and very refreshing. It has light texture, fresh fragrance and definitely addictive. You can never go wrong with these cupcakes, so be sure to make it into a double or triple batch.
Ingredients
Cupcakes:
- 1½ cups all-purpose flour + 1 tablespoon for coating
- 1/2 teaspoons salt
- 1½ teaspoons baking powder
- 1 cup sugar
- 1/2 cup butter
- 2 eggs
- 1½ teaspoons vanilla
- 2 lemons zest + juice
- 1/2 cup milk
- 1-2 cup blueberries
Lemon Basil Frosting:
- 1 stick unsalted butter room temperature
- 2 cups powdered sugar
- 1/4 cup lemon juice
- 1-2 tablespoons chopped basil
Instructions
- Preheat the oven at 350º.
- In a bowl, sift together flour, salt, baking powder, and sugar. Set aside
- In a mixer, combine butter, eggs, vanilla, lemons zest, lemon juice, and milk until well combined.
- Add the dry ingredients to wet ingredients in 3 parts.
- Coat frozen blueberries with 1 tbs flour, and gently stir together to the mixture.
- Scoop the mixture into cupcake liners and bake for 22 minutes.
- To make the frosting, combine all the ingredients and mix well in high speed.
This is such a great idea! Usually when you think of cupcakes…you think of something sweet, but I love how this combines sweet and savory! The basil and lemon definitely give it that super fresh taste! Thanks for sharing girl! Wishing you a very Happy Easter! 🙂

I LOVE that there’s basil in the icing! Did you find piping it out okay? I always find whenever I add something to the icing that it gets caught in the tip when I pipe it out
