Everyone needs to have a secret shortcut recipe. It’s just one of those things you can never go wrong with. With Frederick working in Silicon Valley, two very important things happen:
- One. I only need to cook for myself on most days.
- Two. I have no one to share this salmon tikka masala with! So I had all four servings in one whole day. Don’t judge… Oh, and I also had five pieces of garlic naan to sop up all that creamy sauciness. #shameless
But I don’t mind that at all because this salmon tikka is so good and easy to make.
My secret weapon is fresh salmon and store-bought sauce. So okay, I cheat a bit.
But salmon?
My favorite is Alaskan wild-caught salmon. I try to avoid farmed salmon as much as possible because they are exposed to all sorts of chemicals.
Plus, wild-caught salmon usually have less saturated fat and calories that farmed salmon, however, they also have more protein – a great bonus!
For my salmon tikka masala, I popped down to Whole Foods Market to get Arctic char – yummo! This char is raised in tanks of crystal-clear, ice cold water. The water has been filtered through lava rocks that are hundreds of years old. This is done in Iceland by the Samherji cooperative fish farmers.
Even better – these humane fish farms are also powered using renewable energy. Samherji raises earth-friendly, healthy Arctic char that have no antibiotics, land-products, or growth hormones added to their feed.
I get my Arctic char from the Whole Foods Market seafood counter, and it takes this masala to the next level.
Quick Salmon Tikka Masala
Ingredients
- Salmon Tikka Masala
- 1 tablespoon natural yogurt
- a few sprigs fresh cilantro
- 1 pound salmon fillets from sustainable sources, skin & bones removed
- 4 tablespoons tikka masala paste
- 2 tablespoons olive oil
- Garlic Fried Rice
- 2 cups day-old rice
- 3 cloves garlic minced
- 1 tablespoon fish sauce or salt and pepper
- 2 tablespoons olive oil
Instructions
- Salmon tikka masala: slice each salmon fillet across lengthways into three 1.5cm wide slices.
- Heat a large frying pan over high heat. Once hot, add the olive oil, put the salmon into the pan and cook for about 1½ minutes on each side until cooked through. Add the paste and yogurt, and let it simmer for 5-7 minutes. Top it off with a handful of cilantro.
- Garlic Fried Rice: use your hands to break up any clumps of rice.
- In a large frying pan, add the olive oil and garlic over medium heat, stirring regularly for 1-2 minutes. Add the rice and stir to coat evenly with the oil and garlic. Turn up the heat and stir-fry the rice until it’s heated through. Season with fish sauce or salt to taste
