Ingredients to make smoky jalapeno poppers
Super easy! You only need five ingredients to make these appetizers.
- Jalapeno peppers. Be sure to use firm peppers, and I recommend you use disposable gloves and avoid touching your face
- Beef chorizo. Be sure to find lean meat, if possible
- Dried oregano and black pepper to add flavors
- Shredded mozzarella cheese for the topping

Best cheese to pair with chorizo
Instead of mozzarella, you can also use smoked cheddar or aged cheddar which complement the flavor of chorizo and jalapeno heat.
Do I need to season jalapeno poppers
I don’t recommend it since chorizo is already salty enough and marinated with smoked paprika, herbs, and garlic.
What can I do with leftover chorizo
I add them to garlic fried rice, mini tacos, or scrambled eggs. They also make a delicious freezer-friendly breakfast burrito.

Storing
Once cool, you can transfer it to an airtight container. Refrigerate for up to 3 days. You can also freeze them in the freezer for up to 9 months when stored properly.
This recipe has become one of my go-to recipes, and I for sure will not be waiting for another football season to make these again. This must be on our weekly menu, and I suggest you do the same.
Smoky Jalapeno Poppers
Ingredients
- 12 ounces jalapeno peppers seeded and halved
- 3 ounces beef chorizo
- 1 teaspoon dried oregano
- 2 teaspoon black pepper
- 1 package (8 oz.) shredded mozzarella cheese
Instructions
- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- In a medium bowl, combine chorizo, oregano, black pepper, and cheese. Spoon this mixture into the jalapeno pepper halves.
- Grill the poppers on a less-hot part of the grill until the peppers are hot and juicy and cheese is melting.
