Strawberry French Toast Cupcakes
Sometimes I wish I could live near some of my food blogger friends, it would make everything so much easier, wouldn’t it? All the wonderful foods I see on some of my favorite blogs all in one place? I wish we could but since we couldn’t, we came together to do a virtual brunch. I’m sharing Strawberry French Toast Cupcakes because cupcakes for brunch is the best thing evaaaa….

Ingredients
- 1/2 cup unsalted butter room temperature
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 11/2 cup a.p. flour
- 1/2 tsp bk. powder
- 1/2 tsp bk. soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1 cup buttermilk
- 1 cup chopped strawberry
- Confectioners sugar optional
Instructions
- Preheat the oven to 350F.
- In a bowl, sift the flour, bk. powder, bk. soda, salt, and cinnamon. Set aside.
- Cream the butter and sugar until light.
- Add the eggs and whisk together. Add vanilla extract and mix well.
- Add the flour mixture and beat on medium speed until just combined.
- Slowly add buttermilk and mix slowly until combined. Using a spatula, add the strawberry.
- Fill cupcake liners just over 2/3 full.
- Bake for 17-22 minutes or until a toothpick comes out dry.
- Let it cool for 5-10 minutes and dust with confectioners sugar.
