This crispy and delicious rujak cireng or fried tapioca flour is a popular Indonesian street food snack made with tapioca flour and served with rujak sauce. They freeze well and you can fry them in an air fryer. Moreover, they’re a crowd pleaser!
Rujak cireng is one of Indonesian street food from Bandung. Cireng stands as aci goreng or fried tapioca flour. It has a chewy texture and is so easy to make; however, you will need the right consistency to cook it.

- Garlic, microplaned
- Green onion. I use the white part only, but you can add the green part also
- Tapioca flour and this is the tapioca flour brand I usually use
- Salt for seasoning
- Chicken seasoning powder to add flavors
- Palm sugar for the sauce
- Tamarind paste to balance the palm sugar
- Thai chili pepper if you want the sauce spicy
- Oil to fry the fried tapioca flour
How to cook cireng
- Mix garlic, green onion, tapioca flour, salt, chicken seasoning, and water. Cook over medium heat and keeps stirring until it gets thickened
- Make cireng in a round shape using your hands
- Heat the oil over medium heat, then fry cireng until they turn nice and golden
- To make the sauce: grind all the ingredients with pestle and mortar. Add water if necessary to thin the sauce
Cireng variations
Some people get very creative. They sometimes use a cookie cutter and shape them into triangles, hearts, or even car shapes.
As for the fillings, you can add cooked ground meat, thinly sliced sausages, cheese, or chili sauce if you like them spicy.
Best time to eat fried tapioca flour
We eat fried food anytime! There’s no special occasion to make cireng although they make a perfect companion during tea time or in the afternoon. However, you can have them as early as breakfast or as late as suppertime. Also note, there’s no nutritional value here.
Are rujak cireng freezer-friendly?
Yes. You can freeze them right after you mold them into shapes. Add more flour so they don’t stick to one another, then place them in a Ziploc bag. They can be stored in the freezer for up to 6 months.
Can I fry cireng in an air fryer?
Absolutely! Just spray them with a little bit of oil, then air fry for 5-8 minutes per side at 375F. Every air fryer has a different temperature so add more time to fry them.
Storing rujak cireng
Cireng: I don’t recommend storing cireng in the fridge and they usually taste better when fresh.
Rujak sauce: you can store bumbu rujak (rujak sauce) in the fridge for up to 1 week. And if you have extra enjoy it with fruits or rujak buah.

I had never heard of Cireng before! But I love Indonesian food so much. (one of the perks of living so far from anywhere…Bali is our closest holiday destination!
