I can’t believe May is just around the corner. As much as I love the spring weather, I don’t want the year to end too soon. Just 2 years ago we had the amazing chance to visit Hawaii – Oahu to be exact – after a long time of wishing to put my toes in the white sand and sample the fresh foods of the island. And Hawaii was as beautiful as I saw on the postcards. And their food…glorious!
In my attempt to bring Hawaii back to my home, I’ve shared this Luau Eggs Benedict Waffle. And today I’m back with my sunshine bowl. I love tropical fruits. What can I say – I grew up in a tropical country where fruits are overflowing.
So you could imagine my excitement to see rambutans and guavas when we were in Hawaii (spoiler alert: friend me on Instagram so you can see where I go and what I enjoy).
This smoothie bowl is full of love and flavor. Look at those vibrant colors! The ingredients aren’t always easy to find, but this bowl is worth the effort. From dragon fruit to pineapple, this should serve your fruit intake for the day as you daydream of a Hawaii trip. Who says brunch can’t be fun and colorful?
Ingredients
- 1/2 cup almond milk
- 2 large frozen bananas
- 1/2 cup of fresh mango
- 1/2 cup of fresh pineapple
- ½ pitaya/dragon fruit
- 1/2 cup strawberries fresh or frozen
- Topping: fresh fruits granola, and shredded coconut
Instructions
- Blend everything, except topping, in a blender for 30-45 seconds.
- Add topping and enjoy!

I adore dragon fruit! I have never really tried a smoothie bowl before and always thought they were yogurt based. I really like the idea of using almond milk instead of dairy.

Smoothie bowls are a favorite brunch dish, they are so versitle, you can dress them up with any seeds, fruit or extra’s you want, so basically make them different every time. I love that they fill you up, especially when you use granola in them. My husband and I love to go on the weened and get a smoothie bowl, it keeps us going till the afternoon.
I love that your smoothie bowl has a couple of different fruits blended together, it must taste very tropical and delicious. I’ve been making Acai bowls blended with Banana’s and Acai but it gets expensive, I’m going to give your’s a try. Costco put out a bag of frozen fruit that contains, pineapple, mango and pitaya, I wonder if I can use that with fresh banana’s?
