How to make Nutella-filled cookies
Making these stuffed cookies is easy and only takes less than ten ingredients.
- Flour. Always use all-purpose flour unless it’s specified in the recipe
- Cocoa powder to add extra depth of color and chocolate taste
- Baking powder to encourage the dough to spread up and out
- Butter. I use sweet butter; however, unsalted butter also works
- Sugar. You will need granulated sugar and dark brown sugar
- Egg and another yolk
- Baileys for extra flavor
- Nutella for filling
How to make chocolate-filled cookies
- Combine the flour, cocoa powder, and baking powder in a bowl. Set aside.
- Whisk butter, sugar, brown sugar, and egg until combined.
- Add Baileys and flour mixture; then fold using a spatula or wooden spoon until the dough comes together. Refrigerate for 30 minutes.
- Take a scoop of cookie dough and flatten it into a small dish. Take a spoonful of chilled Nutella and place it in the center. Pinch the seams like a dumpling. Roll into a ball and place on a baking sheet.
- Bake in the oven at 350F for 10 minutes, then cool for 5 minutes before serving.
Make ahead cookies
You can make these cookies ahead. Follow steps 1-4; then freeze the dough on a baking sheet for 1 hour. Transfer to an airtight container in the freezer for up to 2 months.
Be sure to thaw the dough overnight before you continue with step #5.
Substitutions
If you run out of Nutella, you can also use peanut butter or speculoos cookie butter, which always turns out to be a favorite!
