I love sweet potatoes. Back in Indonesia, we use sweet potato for fruit salad that’s called rujak. But wait, is a sweet potato a fruit or vegetable? Anyhow, I am getting lazy yet healthy on ya today.
The ingredients
Sweet potato breakfast hash is the real deal and so easy to make. You will need:
- Sweet potato. Do you know there are 16 different types of sweet potatoes? For this sweet potato hash recipe, you can use jewel or garnet type which is very common and available in major supermarket or farmer’s market
- Onion, garlic. These will add flavors to this hash
- Bell pepper. I use red pepper in this recipe; however, you can replace it with any colors
- Smoked paprika. This will add a nice smokey flavor
- Fresh rosemary. I love addinng fresh herbs instead of dry herbs and you can replace rosemary with sage
- Olive oil, butter. Be sure to use good quality extra virgin olive oil
- Egg. Because we all love egg!
Equipment
You will need a large skillet or cast-iron skillet to make this recipe.

Substitutions and additions
- Bacon or sausage, or even leftover steak! The possibilities are endless.
- Vegetables, such as asparagus, mushrrooms, kale, carrot, black beans, or broccoli
- Avocado and turn it into a Southwestern style
- Add more flavors with garlic powder or shallot
- Make it spicy with a pinch of cayenne pepper, chopped jalapeno, or chili flakes
- Garnish with green onions or cilantro
Storing
You can store leftovers in the fridge or in the freezer (without the egg) for up to 3 months.

Sweet Potato Hash
Ingredients
- 2 large sweet potatoes peeled and cubed into 1-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 small white onion chopped
- 1 small red bell pepper chopped
- 4 cloves garlic chopped
- 2 teaspoons smoked paprika
- 2 long stems fresh rosemary
- Salt and freshly ground black pepper
- 1 egg fried
Instructions
- In a salted boiling water, add sweet potatoes and cook until tender. Drain and dry using paper towels.
- Add the oil and butter to a skillet over medium-high heat. Add the onion, bell peppers, and garlic; and saute until tender and lightly golden for 5-6 minutes.
- Add the sweet potatoes to the skillet, and add rosemary, paprika, salt, and pepper. Cook in a single layer, stirring occasionally until the potatoes are golden and crisp. Transfer to serving plates and top with fried egg.
